Lancaster House Taste the Best of Lancashire’s Creamy Cheese Trail

Lancaster House Head Chef, Damian Ng, and Food & Beverage Manager, Gary Tennant, have been out and about on the Lancashire Cheese Trails, sharing a few recipes using local cheeses and discovering new and innovate flavours from the local artisan cheese makers. There are three trails – Crumbly, Tasty and Creamy  beautiful walks in the Lancashire countryside that pass the door of no less than seven dairies producing world class cheese.

Creamy Cheese Trail

The Creamy Cheese trail is a four mile circular walk starting and finishing in the picturesque village of Chipping, within the Ribble Valley and on the south-western edge of the Forest of Bowland. Following the ‘whey’ whey-markersmlmarkers, you will come across award-winning Leagram Organic Dairy, a small family-run business built upon the Cheese-making passion of the late Bob Kitching.  Bob was known far and wide for his unique and entertaining cheese demonstrations.

The Dairy is now run by Faye, Bob Kitchings daughter, who showed Gary and Damian around the dairy and the museum of cheese making artefacts which her father used to share his passion for the craft.

The dairy adheres to strict organic standards and the cheese is hand-made in the traditional way. The sheep and goats milk comes from local farms and all the cows milk used is sourced from one organic farm on the nearby Leagram’s estate. The small dairy produces a huge variety of cheeses including  Gloucester, Red Leicester, Cheddar and one of the latest editions a Lancashire soft cheese similar to Feta, but sweeter. There is no shortage of flavour-pairings – take your pick from apple, cranberries, apricot, pineapple, fried onion, mustard and mint.

After a day on the Creamy Cheese Trail, Gary and Damian came back to Lancaster House armed with samples of innovative cheeses and lots of inspiration for new cheese dishes. Damian commented,

There was such a wide range of fantastic flavours and textures right on our doorstep. I can’t wait to get experimenting and creating a few new recipes. We hope to invite some of the Leagram’s team to the kitchen in the New Year to try out some of the dishes.
