I’m sure it is no accident that National Cake Week comes when Bake Off is moving into Quarter Finals and the whole nation has gone cake crazy. The team at Lancaster House have had a week of intense competition – sieving, creaming, folding in, rising, dusting, dredging and perhaps one or two soggy bottoms along the way. Now, however, they can reveal their star baker!

Kerry Fenton from the Housekeeping Department was the clear winner with her Heavenly Chocolate Baileys Cake. Head Chef, Damian, seemed to forget that he was just supposed to be tasting the cakes – but Kerry’s cake was so good he just had to polish off the lot!
Kerry has been generous enough to share her recipe with us so that we can all enjoy that delightful chocoliciousness.
Sieve flour, bicarbonate soda and cocoa together and then mix in sugar. Make a well in the centre of the dry mix. Add all other ingredients and mix well with an electric whisk.
Bake in oven at 180 deg. C for 25-30 mins, until firm
Boil can of condensed milk for 2 ½ – 3 hrs (preferably the day before).
Whisk cream until very thick, add condensed milk and a good shot of baileys, and mix well.
Cream all together until smooth.
This makes either one large cake or 18 large cupcakes, and can be served hot or cold with the cream filling on the side
