The planning of a new children’s menu can be fairly long, drawn-out affair. Quality local suppliers must be sought, analysis of what children are favouring from our current menu, ensuring that we are keeping up with the ever-changing high street trends, and even, as we have done in the past, consulting to underline our commitment to healthy eating.

But for the next Lancaster House Sam’s menu, the team wanted to know what Kids Really want. So, we have gone ‘back to school’ to find out from the children themselves.

The team including Tim Bell, General Manager, Emma Underwood, Operations Manager, Gary Tennant, Restaurant & Bars Manager and of course Damien Ng, Head Chef,  spent 3 hours with a class of 10 & 11 year olds from Scotforth Church of England Primary School in Lancaster, learning what tickles their tastes buds. The children were then challenged to each design a starter, main-course and dessert for the new menu, taking into account all of our usual pre-menu criteria, but more importantly, what they truly like to eat.

Not only did they have to design the dish, but in the time-honoured tradition of Sam’s Menu, they had to give the dish a fun name which they think would make kid’s choose a particular menu choice.

Some incredible dishes came out from the session including elaborate use of herbs, spices, international influences, as well as some fantastic twists on traditional British favourites. Wonderful dish names such as “Zingy Zangy Sunshine”, “Willy Wonka’s Stepping Stones”, “Pebbles and Ponds” and “Rainbow Carbonara” had the Lancaster House team amazed with how much creativity and gastronomical passion the young Lancastrians have given us, and more importantly, inspired us for the next Sam’s Menu.

Now the Lancaster House team will spend the next few weeks looking at all the suggestions and will come up with a short-list of dishes that could make it on to the final menu for our customers. The dishes will be formulated by Head Chef, Damien Ng, and will be prepared at the School in the Spring/Summer term to get the final “Thumbs Up” from the children themselves.
